Steve's Hot Dogs on The Hill takes hot dogs and related sausages a couple of steps up the ladder of excitement. Steve Ewing is using first-rate meat, like quarter-pound Nathan's hot dogs and sausages from South St. Louis' own G&W Sausage. And instead of merely steaming them or cooking them on a flat grill, he smokes them over hickory for several hours, then grills them.  This takes them to a new level, primarily from the smoky notes but also because it crisps up the skin, giving  the bite what hot dog aficionados call "the snap," not quite crunchy but with a little resistance to the tooth. They'd be more appealing, however, on warm buns.  We were excited to see G&W's wonderful Hungarian brats and chorizo on the menu. Steve's salsiccia comes from Imo Meat and Sausage Company; many of the trimmings are home-grown or home-made. Steve piles them on, flipping containers like a bartender with a new cocktail shaker. Most of the 10 specialty dogs have several, though, so speak up quickly to modify.  A variety of chips and soft drinks round out the entrees. For dessert, Steve's wife makes an assortment of cookies...but give Steve the credit for bringing new heights of pleasure to sausage aficionados.   See Partial Menu Below:   St. Louis Style HYAAAH!
